We continue our unconventional pairing with a Grenache Blanc/Vermentino blend from Bila-Haut. This time, we wondered if the white blend could hold up to a Bacon, Lettuce, and Tomato sandwich. Would the personality of the ’17 Bila-Haut Occultum Lapidem Blanc Cotes du Roussillon shine through without the B overshadowing, while having enough liveliness to compete with the L and the T?
To no surprise, it was a great pairing. We made a #catalleyfarms lemon basil pepper aioli for the spread, and layered the homemade Early Girl tomatoes atop Jessica’s Tuscan Marble Rye with organically grown Romaine lettuce and local bacon provided by our local meat purveyor, Walden Local Meat Co.
The beautiful Michel Chapoutier Bila-Haut Occultum Lapidem Blanc is balanced, with stone fruit flavors of apricot and peaches, with audacious mineral notes. This wine catapulted the BLT to a level of awesomeness for the taste buds. Both are spectacular summer additions. And if you’re looking for other unusual whites, we have a great list here.
