I couldn’t drink this puppy without a good food pairing. Heck, it’s almost a sin not to pair Chablis Premier Cru without seafood, so I found some local Boston lobster to go with it and made lobster rolls to pair with this audacious wine, the ‘14 Maison Drouhin Vaudon Chablis Premier Cru, Mont De Milieu, France ($38)

Fun Facts: This is a top premier cru located on the right bank of the Serein River. The name refers to the oddness of the hillside that used to have a boundary running through its middle (“millieu”), between the jurisdiction of Chablis, which used to be located in the county of Champagne, and that of Fleys, in the Duchy of Bourgogne. The plot where this wine was grown has higher temperatures and longer sunny days than other Premiers Cru locations.

What does it taste like? If you’re looking for a good example of what a Chablis tastes like, this is it! It’s clean, and fresh with delicious lemon, mineral, white flowers and citrus notes.

Drink Now? Yes, but Premier Cru can age for 10 years!

Food? Lobster rolls are fun and fabulous with Premier Cru Chablis!
