Wine Review: 2007 Ferrari Perle Trento Brut, Italy

This vintage Italian Brut from Ferrari is one of the finest sparklers I have tasted this year; it’s got snap, crackle and pop.

Apple and white peach aromas pop out with fresh bread dough (yeast rising) while smells of almonds roasting in the oven mingle with the fruit. In your mouth, it is racy with plenty of snap and crackle, like a miniature lightning storm where every bolt of lightning is a tingle of excitement on your palate.

The bubbles textures are stimulating and intense. The flavors bring to mind super juicy pear, salty almond and honey.  There is elegance in the structure and finesse on the finish.

oysters on the half shell

For culinarians, this wine is a dream. I served it with fresh oysters and pepper vodka granita then seared scallops on a sorrel sauce. Enjoy!
