The Bubble & Squeak Truffle Blini is a keto friendly truffle dish that is basically a fried egg served on top of vegetables. Marc and I removed the potatoes from the recipe to make kit Keto friendly and dropped the eggs on a bed of Brussel sprouts, red cabbage, carrots, chestnuts, and cranberries. Sprinkle the dish with TruffleHunter black truffle sea salt and preserved black truffle slices. What we love about the truffle slices is that they are usually only available from June to August. However, TruffleHunter’s preservation process extends the life of the truffle by as much as 18 months, and soak the thin slices in a salt brine to enhance their natural flavor, then preserve them in olive oil. They are firm, rich and earthy! If you can’t get your hands on truffle slices, use their truffle dust, which is equally amazing. We plan to keep our pantry stocked with it.
